Season & Pantry is a small food desk in Assen. We write the kind of recipes we want to read: short at the top, honest underneath.

Cooking well at home is mostly a handful of ideas repeated: get the pan hot, give things room, season more than once, and taste before it leaves the kitchen. Recipes are how those ideas travel, and most of them are written as though the reader will never cook anything else.
So the reasoning sits next to the steps. Follow it exactly the first time, then change it on purpose.
